Ingredients

  • 2 (12.5 oz.) cans premium chunk chicken breast drained
  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 1/2 cup bacon pieces about; store-bought, or cook and crumble your own; divided
  • 1 3/4 cups Colby jack cheese divided
  • 1 3/4 cups sharp cheddar cheese divided
  • 2-3 green onions divided

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Slice the green onions.
  • In a large mixing bowl, use a hand mixer to mix the chicken, cream cheese, sour cream, ranch seasoning, half of the bacon, 1 1/4 cups of the Colby jack, 1 1/4 cups of the cheddar cheese, and green onions (reserving some to top the dip). Mix until everything is well combined.
  • Pour this mixture into a 2 quart baking dish, and smooth out evenly.
  • Bake at 350 for 20 minutes.
  • Remove from the oven, and sprinkle remaining cheeses over top.
  • Bake about 5 minutes more, until the cheese on top is melted.
  • Sprinkle with remaining bacon and green onions, cool slightly and enjoy.
