How to Make Chicken Quesadillas with Bell Peppers and Mushrooms

Sauté the veggies. Cut the bell pepper and mushrooms into small pieces and add them to a small skillet over medium heat. Cook for 5-10 minutes, until the peppers are tender.

Build the quesadillas. Heat a lightly greased large skillet over medium heat and lay a tortilla in the bottom. Griddle them. Cook for a few minutes until the bottom is golden, flip, and cook until the other side is golden too.

Serve. Cut each quesadilla into triangles, sprinkle with cilantro, and serve with sour cream on the side.

Tips for the Best Quesadillas

  • Don’t overfill — it makes flipping harder and the filling tends to spill out the sides.
  • Keep the heat at medium. Too high and the tortilla scorches before the cheese fully melts.
  • If you’re making these ahead for meal prep, let the chicken and veggie mixture cool before assembling so the tortillas don’t get soggy from steam.

Storage and Reheating

Leftover quesadillas keep well in the fridge for up to 3 days. Reheat in a dry skillet over medium heat to bring back the crisp exterior — the microwave works in a pinch, but the tortilla won’t stay as crisp.
