Chocolate Mini Bundt Cakes

There’s a very specific kind of chocolate craving that doesn’t call for a whole 9-inch cake — it calls for something small, dense, and glossy with chocolate glaze, that you can eat standing up at the counter without any guilt about “cutting a slice.” That’s exactly the gap these chocolate mini bundt cakes fill.

I made these on a whim when I had a mini bundt pan sitting in my cabinet that hadn’t seen daylight in months, and they turned out so good I’ve made them three times since. A few things worth knowing before you start:

  • Cacao powder for dusting the pan, not flour. This was a small change that made a noticeable difference — dusting the buttered pan with cacao powder instead of flour keeps the outside of the cake chocolate-colored instead of leaving that pale, floury residue you sometimes get on darker baked goods.
  • Sour cream is what keeps these moist without making the batter feel heavy. Don’t skip it.
  • For the glaze, skip the chocolate chips. Chopped baking chocolate or bark melts smoother; chocolate chips have stabilizers that can make the glaze turn grainy when heated.

Directions

Prep the pan. Preheat your oven to 350°F. Butter every cavity of your mini bundt pan, then dust with cacao powder, tapping out the excess. This is the step people skip and then regret — it’s what keeps the cakes from sticking to all those bundt grooves.

Cream the butter and sugar. In a separate bowl, beat the butter and granulated sugar with a hand mixer until combined. Add the eggs one at a time, mixing well after each addition, then mix in the sour cream and vanilla.

Bring it together. Add the cacao powder along with half the flour mixture, stirring with a spoon until just incorporated.

Pour in the milk and mix well, then add the remaining flour mixture. Mix only until the flour disappears — overmixing is the most common reason bundt cakes turn out dense instead of tender.

Bake. Divide the batter evenly among the mini bundt cavities and bake for 15–18 minutes, until the edges pull slightly away from the pan and a toothpick inserted in the center comes out clean.

Cool completely before glazing. Let the cakes cool in the pan for 10–15 minutes, then turn them out onto a cooling rack and let them cool the rest of the way. Glazing a warm cake will just melt everything into a puddle instead of a glaze.

Make the glaze. Microwave the chopped chocolate and milk in 20-second bursts, stirring between each, until melted and smooth. Stir in the powdered sugar — add more sugar for a thicker glaze, or a splash more milk to thin it out.

Glaze and serve. Spoon the glaze over each cooled mini bundt cake and let it set for a few minutes before serving.

Seasonal & Occasion Variations

One of my favorite things about this recipe is how easily it adapts:

  • Spring: Light-colored sprinkles or pastel Easter candies on top of the glaze
  • Fall: A pinch of cinnamon in the batter, or a cinnamon-spiked glaze
  • Mother’s Day: Fresh strawberries arranged around the plate
  • Summer: A mix of fresh berries and whipped cream on the side
  • Any holiday: Crushed candy canes, powdered sugar, or festive sprinkles depending on the occasion

  • No mini bundt pan? A regular muffin tin works — just reduce the bake time and start checking a few minutes early with a toothpick.
